  • Step 3: Let the sugar and water meld together slowly until you've got a syrup that looks like liquid gold.

After finishing the caramel syrup, you continue to make the boba dough.

  • Step 1: Add 50 ounces of water to your amber caramel, then bring it to a boil. 
  • Step 2: Grab a large bowl and pour in 200 grams of tapioca starch. Measure 5 oz of your boiling caramel water and slowly mix it into the tapioca starch. If the dough feels too sticky or too dry, you can adjust by adding a little more caramel water or tapioca starch until you get the right consistency. The goal is to create a smooth, non-sticky dough that you can easily shape with your hands.

Step 4: Shape the Boba Pearls

  • Step 1: Start by rolling your dough flat if you're going for the classic round pearls.
  • Step 2: Cut it into tiny pieces, each of which is a potential pearl. 
  • Step 3: Take each piece and gently roll it between your hands to form perfect little balls

Here's a little trick to keep everything smooth: Sprinkle some dry tapioca starch over the dough pieces, the stickiness is at bay and makes it easier to work with.

If you like a bit of variety with stand pearls, you will want to keep the dough a tad thinner. Then stretch out a canvas of dough. Cut this canvas into slender strands like tiny ropes. Lightly dusting tapioca starch over these strands will ensure they don't turn into a sticky web.

Step 5: Cook your Golden Boba

  • Step 1: Boil your caramel water again and gently add your boba pearls or strands into the pot.
  • Step 2: Turn down the heat and let it simmer softly.
