Garlic naan is one of those dishes that seems intimidating until you make it once — after that, it becomes a staple. The core technique is simple: a yeasted, yogurt-enriched dough, a very hot skillet, and a generous brush of garlic butter the moment it comes off the heat.
The yeast version takes about 1.5 hours total but is mostly passive waiting. The no-yeast version is ready in 30 minutes and still excellent for a quick weeknight side. Both methods produce results that outperform any frozen or store-bought naan.
The three things that matter most:

- (2) a genuinely hot cast iron skillet, and
